Food Recipe: South-Asian Curried Chicken

Inspired by the flavours of India, this dish is as bold and balanced as a well-run business because each ingredient complements the other beautifully.

Ingredients

  • ¼ cup all-purpose flour
  • ½ teaspoon curry powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon garlic powder
  • 4 chicken breasts (or 8 thighs), skinless and boneless
  • ¼ cup coconut oil
  • 1 cup plain yogurt
  • 2 tablespoons lime juice
  • Zest of 1 lime

Instructions

  1. Mix flour and all four spices in a shallow dish.
  2. Coat each piece of chicken with the mixture.
  3. Heat coconut oil in a large skillet over medium heat.
  4. Brown chicken on both sides.
  5. Then cover, reduce heat to low, and cook for 15 minutes or until tender.
  6. In a small saucepan, gently warm yogurt, lime juice, and lime zest, stirring regularly.
  7. Serve chicken with about half of the yogurt sauce poured over it. Use the remaining sauce for extra dipping and flavour. Enjoy!
