Food Recipe: Stuffed Mushrooms – Bringing It All Together With Food
Last week, we had dinner with 2 friends, who are sommeliers. I naively suggested that we have an appetizer evening to go with 2 special bottles of wine that we’ve acquired over the years – one from our travels, the other a gift.
I panicked a little after realizing that the food had to perfectly complement the wines. So, I turned to my brainstorming buddy – ChatGPT. After some back and forth, I decided on three dishes:
- Stuffed mushrooms
- Olive tapenade
- Chocolate hazelnut tart for dessert
Today, I’m sharing the mushroom recipe because it was a huge hit. Although simple, the combination of ingredients – breadcrumbs, herbs, hot Italian sausage, vermouth, and a mix of cheeses – created a dish that felt complex, yet easy to make.

Hot Italian Sausage Stuffed Mushrooms
Ingredients:
- 24 large whole fresh cremini or white mushrooms (leave caps whole, see below for further instructions)
- 1 large hot Italian sausage (casing removed and crumbled)
- 2 Tablespoons olive oil
- 1 Tablespoon butter
- 1 leek (rinsed to remove grit), chopped
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup dry vermouth plus 2 Tablespoons (divided)
- 6 ounces garlic-herb goat cheese
- 1/4 cup fresh parsley, chopped finely
- 1/2 cup seeded bread crumbs, toasted (store-bought or your favourite bread)
- 1/2 cup grated parmesan cheese
- 1/2 cup grated mozzarella cheese
Instructions:
Preheat oven to 350 degrees (F).
Prep the Ingredients:
- Carefully clean the mushroom caps with a paper towel. Remove all dirt and grit.
- Then gently remove the mushroom stems. Use a small spoon to gently hollow out the center of each mushroom. Leave the caps whole and chop the remainder of the mushrooms you removed from the cap.
- Chop leeks and mince garlic.
- Toast seeded bread and make crumbs (or you can use store-bought bread crumbs).
- Shred parmesan and mozzarella cheeses.
Cook and Prep the Filling:
- In a large skillet over medium heat, crumble and cook the sausage, with a wooden spoon for about 4 minutes.
- Add the olive oil and butter to the pan, with the sausage. Reduce the heat to medium-low and add the leeks, garlic, and chopped mushroom pieces. Cook, stirring frequently, for 5 to 6 minutes.
- Pour in the vermouth to deglaze the pan and scrape any pieces that are stuck to the pan. Allow the liquid to evaporate for 1-2 minutes.
- Season with salt and pepper and remove the pan from heat. Cool slightly for about 10 minutes.
- Stir in the goat cheese, parsley, seeded bread crumbs, and ¼ cup each of the parmesan and mozzarella cheeses. The mixture will be thick and creamy.
Fill and Bake the Caps:
Serve warm and enjoy!
